This week, I have been very busy (what’s new) and did not get any awesome projects made that I can think of, but I have made TWO of these cakes.
My family has looked forward to this cake every fall since I can remember. The recipe came from a local “Fall Festival”, at which, organizations would sell goods to raise money. One of the dishes that was there every year was this cake; served some years with whipped cream, some years with cream cheese frosting. Personally, I am a whipped cream girl, when it comes to this cake.
The following image is courtesy of Confessions of a Bake-A-Holic, who posted a recipe that is almost identical to mine. Don’t you love that blog name? I could SO go by that name! I wanted to point out that she added a little glaze to hers. I might have to give that a try!
Chopped Apple Cake
4 C apples, chopped
2 eggs
1/2 C vegetable oil
2 tsp vanilla
2 C sugar
2 C flour
2 tsp cinnamon
2 tsp baking soda
1 tsp. salt
Bake at 350 degrees for 1 hr.
If you have been coming here a while, you know that, while I measure everything as precisely as I can, I cannot follow directions to save my life. I have to taken to not even writing them down. You’ve made cake, you know what to mix with what, right? Trust me, if you don’t do it in the same order every time the cake is still YUMMY!

What is it with the spacing?? If you use Live Writer, talk to me. What I am doing wrong? I just started using it, but this is getting old fast! :)
